Understanding Temperature Conversion
Baking is a science, and precise temperatures are crucial for chemical reactions like rising, caramelisation, and setting. Here is how to adapt any recipe.
Identify the Base Temperature
Check your recipe for the original temperature and unit. Older British recipes may use Gas Marks, while American ones will use Fahrenheit.
Normalise to Conventional Celsius
Convert the given temperature to standard conventional Celsius. For example, 350°F becomes 177°C (usually rounded to 180°C), and Gas Mark 4 is exactly 170°C.
Apply the Fan Adjustment
If you are using a fan-assisted oven, subtract 20°C from the conventional Celsius temperature. (e.g., 180°C conventional becomes 160°C fan).
Adjust Baking Time (If Needed)
Because fan ovens cook more efficiently, you may need to reduce the baking time by 5–10 minutes for longer bakes, or check for doneness a few minutes early.
Common Baking Temperatures
A handy cheat sheet for standard UK baking temperatures across all oven types.
| Description | Fan Oven (°C) | Conventional (°C) | Fahrenheit (°F) | Gas Mark |
|---|---|---|---|---|
| Very Cool (Meringues) | 110°C | 130°C | 250°F | 1/4 |
| Cool (Slow cooking) | 120°C | 140°C | 275°F | 1 |
| Moderate (Sponges) | 150°C | 170°C | 325°F | 3 |
| Moderately Hot (Cakes) | 160°C | 180°C | 350°F | 4 |
| Hot (Roasting, Bread) | 180°C | 200°C | 400°F | 6 |
| Very Hot (Pizza, Pastry) | 200°C | 220°C | 425°F | 7 |
| Extremely Hot | 220°C | 240°C | 475°F | 9 |
Oven Temp FAQ
Answers to the most frequently asked questions about oven temperatures and baking conversions in the UK.
As a general rule, you should reduce the temperature by 20°C when using a fan (convection) oven compared to a conventional oven. For example, if a recipe states 180°C conventional, set your fan oven to 160°C.
Gas Mark 4 is equivalent to 170°C in a conventional oven, 150°C in a fan oven, and approximately 325°F to 340°F. It is considered a “moderate” oven, ideal for most cakes and sponges.
American recipes often assume a conventional oven, and their standard baking temperatures (like 350°F) align closely with UK Gas Mark 4 (170°C). However, American convection ovens may require a 25°F reduction, similar to the UK’s 20°C fan oven rule.
Oven thermostats can drift over time. You can purchase an inexpensive standalone oven thermometer to place inside your oven. Preheat to a set temperature (e.g., 180°C) and check if the internal thermometer matches the dial after 15 minutes.
