Cocoa Measurement FAQ
Everything you need to know about measuring cocoa powder accurately for perfect baking results.
One US cup of natural unsweetened cocoa powder weighs approximately 85 grams. Dutch-processed cocoa powder is slightly denser and weighs about 90 grams per cup, while black cocoa powder can weigh up to 95 grams per cup.
Yes. Dutch-processed cocoa is treated with an alkali to neutralise its acidity, which changes its density and colour, making it slightly heavier per cup than natural cocoa powder. Black cocoa is heavily dutched and is the densest of the three.
Using a digital kitchen scale to measure in grams is always the most accurate method for baking. If you must use cups, use the ‘spoon and level’ method: lightly spoon the cocoa powder into the measuring cup and level it off with a straight edge. Do not scoop directly or pack it down.
By weight (grams), they can be substituted 1:1. However, because Dutch-processed cocoa is not acidic, it will not react with baking soda. If a recipe specifically calls for natural cocoa and baking soda, substituting Dutch-processed may result in a flat baked good unless baking powder is also adjusted.
